What is the difference between quartzite and quartz?

They are unrelated. Quartzite is a natural metamorphic stone quarried in slabs. Quartz is engineered from ground stone and resin. Quartzite is harder and more heat tolerant; quartz is non-porous and needs no sealing. The similar names cause constant confusion.
