Does marble etch?
Yes. Acid — lemon, wine, vinegar, tomato, some cleaners — reacts with the calcium carbonate in marble and leaves a dull mark. This is etching, not staining, and a sealer does not prevent it. It is a physical reaction with the stone itself.
Where should marble be used in a kitchen?
Use marble where its weaknesses are least exposed: a baking area, a bathroom vanity, or an island that is not the primary prep zone. Avoid running it around a sink and cooktop in a heavily used kitchen unless you are comfortable with patina.
What is a better alternative if I want the marble look?
Quartz is produced in convincing marble-look patterns and is non-porous, so it delivers the appearance without etching or sealing. Quartzite is another option: it reads like marble but is considerably harder and more stain resistant.

Light etching on a polished marble can often be honed out by a stone professional. Prevention is far easier than repair.
Is marble a bad choice for Florida?
Not inherently — humidity is not marble's problem. Acid and abrasion are. Place it thoughtfully and it performs well.
